Two words with one sound
Japanese has many homophones, and this pair is one of the first learners notice. Both are i-adjectives, both are pronounced yasashii, and both conjugate the same way, but they come from different kanji with unrelated meanings.
When you hear yasashii about a person, a voice or a flavour, it is kind or gentle. When you hear it about a question, a book or a level, it is easy.

優しい: kind and gentle
The kind yasashii covers personality, manner and anything soft or mild. It describes people, voices and smiles, and by extension, food, fabrics and products that are gentle on the body or the environment.

易しい: easy and simple
The easy yasashii describes tasks, texts and levels that are not difficult. It is standard in education, and textbook and exam writers use it frequently.
In casual conversation, kantan is the more common word for easy, and saying kantan desu sounds more natural than yasashii desu for a simple task.

Yasashii nihongo: plain Japanese
Yasashii nihongo, usually written in hiragana as やさしい日本語, is plain Japanese designed for people still learning the language. It uses short sentences, common words, furigana and fewer honorifics.
Local governments use it for resident information, and it is widely used in disaster and emergency information. Some news services also publish articles in easy Japanese for learners.

Asking for yasashii nihongo is a completely normal request, and many people in customer-facing jobs are used to adjusting their speech.
Complimenting someone's kindness
Yasashii desu ne is a natural compliment among friends and colleagues. With superiors and customers, thanking them for a specific action usually sounds better than commenting on their personality.
Shinsetsu, kind or helpful, focuses on what someone did; yasashii focuses on who they are.
