Yakiniku menus are organised by cut and grade, and ordering happens in rounds rather than all at once. Many restaurants use a tablet, but you will still talk to staff about time limits, sauce, the grill and the bill. How a yakiniku meal works

Each table has its own grill, and you order plates of raw meat, vegetables and sides to cook yourself. People usually order a few plates, grill and eat them, then order the next round.

Staff will explain the grill when you sit down if it is your first time. They may also ask whether you are on a set menu or ordering item by item.

The cuts on the menu

Menus often group cuts by type and grade. A prefix such as jō marks a higher grade, and tokujō an even higher one. The same cut may appear at two or three prices.

The names below are common across most restaurants, although exactly which part of the animal is used can vary slightly.

Ordering in portions

Meat is counted in portions with ninmae, so two portions is ni-ninmae. Staff will often ask whether you want sauce or salt seasoning, especially for cuts that can be served either way.

Rice, soup and salad are ordered as sides. Size words such as ōmori, a large serving, work for rice everywhere.

All-you-can-eat plans and last orders

Tabehōdai plans let you order freely for a fixed time, often with a separate drinks plan. Staff announce last orders before the end, and after that no new plates can be ordered.

Ask the time limit when you choose the plan so you can pace your rounds.

At the grill

When the grill net gets blackened, meat sticks and burns. Asking for a replacement is completely normal, and staff often offer before you ask.

At a shared table, a few habits keep things pleasant: do not overload the grill, keep raw meat tongs separate from eating chopsticks, and serve others when their piece is ready.

Payment is usually at the register near the door. Some restaurants hand out a mint or a deodorising spray on the way out, since grilled meat smell clings to clothes.

Karubi is usually a rich, marbled cut from around the ribs, while rōsu is generally a leaner cut from the loin or shoulder area. Exact cuts vary between restaurants, so ask if you want something lighter.
